Local mom starts mobile popsicle business

Hello Pop

What began as an idea for one local mom to help her teething son has turned in a full-fledged business. 

At the start of last year, Chelsea Boling, owner of Hello Pop, said she started making fruit and vegetable ice pops for her son to help sooth his sore gums from teething and introduce him to some new foods.

“I really enjoyed making pops and experimenting with new flavors which spurred the idea for Hello Pop,” she said. 

Boling said while it was intimidating to launch a business, she has had supporters from day one.

“We have established a lot of loyal fans,” she said. “In 2020, we did a lot of deliveries to homes because people were staying home more due to COVID and events and activities being cancelled.” 

Hello Pop is based in Hancock County, but Boling said she does a lot of business in Owensboro and surrounding areas. 

The current menu includes lemonade, pineapple, strawberry, and watermelon.

“We have ideas for new flavors and sometimes offer limited edition and seasonal flavors,” Boling said. “For example, we made pumpkin spice pops last fall.” 

Hello Pop will be at every Friday After 5. Boling hopes to open to additional retailers in Owensboro and surrounding areas soon.

A Hello Pop cart is available to rent for private events like weddings, showers, parties, etc.
