Niko’s Bakery & Cafe has new owners

Chef Matt Weafer and his wife Jessica are the new owners of Niko’s Bakery & Cafe.

“We’re super excited and we’re ready for the challenge,” Matt said Tuesday. “My family is excited.” 

Niko’s is celebrating its one-year anniversary this week after opening in February 2019 at 601 Emory Dr. in Wesleyan Park Plaza. The local bakery serves an assortment of European-style pastries and desserts including sandwiches, soups and salads.

Matt said he took the opportunity and ran with it when the chance presented itself.

“It has been a labor of love,” Matt said. “We don’t plan on any major changes. We’ll keep doing what we’ve been doing to be successful for the last year.”

Matt said he has been the head chef at Niko’s since its inception. He said he helped design the bakery and developed most of the recipes.

Jessica helps Matt run the bakery about three nights a week.

“It kind of feels like business as usual,” Jessica said. “We’ve just always felt comfortable there. I always enjoy coming there. It doesn’t feel like going to work.”

She said they are planning a ribbon-cutting in March.

Matt said he’s thankful to the original owners Lola, Christo and Spiro Nousiadis.

“We want to honor their name and we want to stay true to that,” Matt said. “This is just an exciting time for us and we’re grateful for them.”
