Barbecue is more than just food for Kyle Willis. It’s a family tradition. Inspired by a lifetime of cooking and encouragement from loved ones, Willis launched NeedMor BBQ, a food truck serving brisket, ribs, pulled pork, and creative comfort dishes to communities across the area.
“I grew up watching my uncles barbecue and learning from my grandmother, who worked in restaurants her whole life,” Willis said. “I’ve always loved cooking, and after years of perfecting recipes, I thought it was time to share them with others.”
Balancing the food truck with his full-time job at Commonwealth Rolled Products, Willis said the mobile business model gives him the flexibility to bring his dishes to a variety of locations. Since starting last summer, NeedMor BBQ — which is based out of Willis’s hometown of Falls of Rough — has popped up in Hardinsburg, Fordsville, and Daviess County, catering everything from weddings to birthday parties.
The truck’s name is rooted in local history. Willis explained that it comes from a former store in the area known as “Need More,” where customers often joked about always needing more items. He thought the name was fitting for a barbecue business, playing on the idea that customers would want seconds.
Willis, who runs the food truck with his wife Tiffany, takes a hands-on approach to crafting his menu, focusing on barbecue staples and creative options like loaded nachos. He plans to expand offerings in the spring with items like loaded baked potatoes.
“Everywhere you go with a food truck is a different crowd,” he said. “It’s been a great learning experience.”
NeedMor BBQ is taking fewer bookings during the winter months, but Willis is already planning for a busy spring. Customers can find updates and booking information on the food truck’s Facebook page.
“If you see us out, swing by and give us a try,” Willis said. “Our brisket is different from anything else you’ll find around here, and we’re just getting started.”
